Ćatovića Mlini is a konoba in Morinj, at the head of the Risan bay in the Boka Kotorska. The name means Ćatović's mills, and it is literal: the restaurant occupies old watermills, on the streams that come down off the Orjen massif and run into the bay a few metres further on. The water is the reason the mills were built here and the reason the place looks the way it does. It calls itself a konoba — the traditional Adriatic eating house rather than a restaurant in the international sense — and the greeting on its own site is direct: with us, you are the star. Tables stand outside among the water and the trees, which is where almost everyone sits. The hours are simple and the same every day of the week: midday to half past ten at night, straight through, with no closing day. Booking is the sensible course in season — this is one of the best-known addresses on the bay and the Boka fills up between June and September. Morinj lies on the E65, the coast road that runs around the bay from Herceg Novi towards Kotor. Konoba Ribar - "the fisherman's tavern" - sits on the coast road between Morinj and Perast, with its terrace built out over the water of the inner bay and the two islands of Perast straight ahead. It is the plain, good kind of Boka seafood place: black risotto, grilled fish by weight, prawns, fried squid, breaded mussels, octopus, a fish soup to start, and a few pasta and vegetarian plates for the rest of the table. The kitchen is open every day from midday to ten in the evening, which makes it easy to fit around a boat trip or a swim from the rocks below. From Morinj it is a few minutes by car or a walk along the shore. A table at the edge of the terrace is worth asking for.

Verige 65 stands on the water at Kostanjica, on the coast road through the Bay of Kotor. The name is the address: Verige is the strait, the narrowest point of the whole bay, where the two sides come within a few hundred metres of one another. The word means chains, after the chain that was once drawn across the water to keep ships out. The restaurant sits on that narrows and describes itself as a place of unique energy. It is arranged for more than dinner. Alongside the kitchen the house takes events and weddings, which in this setting is the obvious use for a terrace over the water, and it keeps a gallery of its own on the site. The hours are long and identical every day: eight in the morning until midnight, with no break and no closing day. That covers a coffee on the way round the bay, a lunch, and a dinner as the light goes off the far shore. Kostanjica is between Morinj and Perast on the E65, about fifteen minutes' drive from either. The Verige strait is the point every boat entering the bay must pass, and the reason the inner Boka was defensible for six hundred years. Perast, with its two island churches out in the water, is the next village along and the most photographed spot on the whole bay — so this is a reasonable place to stop on the way there or back. Do-Do Café stands on the Šetalište Pet Danica in Herceg Novi. That address is the whole point of the place, so it is worth explaining: the Šetalište Pet Danica is the seafront promenade, a paved walk that runs for several kilometres along the water at the mouth of the Bay of Kotor, with the sea on one side and the town climbing the hill on the other. Almost everything in Herceg Novi that faces the water faces it from here. The hours describe a café rather than a restaurant, and a long day: seven in the morning until one the following night, every day of the week without exception. Eighteen hours is the working pattern of a promenade café on this coast — the first coffee before work, the afternoon in the shade, and the evening walk that half the town takes when the heat goes. We hold no website for it, so nothing is written here about what it serves. The telephone is the way to ask. Herceg Novi sits at the entrance to the Boka Kotorska, about half an hour by car from Morinj along the E65 and rather less from the Croatian border. Spago is a bar and restaurant on Radoja Dakića in Podgorica, and it comes from the same house as Zheng-he, the Chinese restaurant in the city — both founded, as the owners put it, out of a love of hospitality, food and tradition. Knowing that the two are related explains the standard of service the place is run to. The house makes two claims for itself and both are checkable when you arrive. The first is the site: an exclusive and unusually quiet location, which in a capital city is worth something and is not the same as being central. The second is the wine. Spago keeps a wide Italian list and says so as its main argument — every great wine has a story behind it, and they expect one of them to be waiting for you. It opens at eight in the morning and runs to midnight, every day of the week without a closing day. That span makes it a coffee stop, a lunch and a late dinner at the same address, which is how a bar and restaurant together are meant to work. Masala Art is an Indian restaurant in the middle of Podgorica, and it is one of the few places in Montenegro where the cooking of the subcontinent is treated as a serious kitchen rather than as a takeaway. The house calls itself upscale and describes what it does as an authentic journey through Indian cuisine — the familiar dishes, presented with some ceremony. That matters more here than it would elsewhere. Montenegrin restaurants run on grilled meat, Adriatic fish and the Italian influence that arrived across the water; an Indian kitchen in Podgorica is a genuine alternative rather than one option among many, and for a vegetarian traveller it is one of the easier addresses in the country. Konoba Lanterna is a small tavern on Kralja Nikole in the old centre of Podgorica. A konoba is a particular thing along this coast and its hinterland — the traditional Adriatic eating house, historically the room where wine was kept — and the word sets the expectation better than the English "restaurant" would. The house describes itself plainly and does not oversell: a small and pretty konoba in the middle of the city, an interior of stone and wood, attentive staff and traditional cooking. Those three together are what a konoba is meant to be, and the room is honest about being small. Two practical things. Tables can be reserved through the restaurant's own site, which matters in a room of this size. And the kitchen delivers food and drink to any address in the Podgorica area, which is unusual for a traditional house and useful if you are staying outside the centre.
